Today, we salute Air Force Veteran Paul Desillier. There was a time when Paul was scrubbing in for orthopedic surgery in the early mornings, but now he’s out of the house by 7 a.m. many weekdays prepping trays of macaroni and cheese, baking corn muffins and wrapping brisket. Paul, a VA retiree, has been working in the food truck industry for a couple of years, initially using the town center commercial kitchen for his food prep before moving to the local American Legion’s kitchen. After his military service, he loves food service, in the food truck decorated and named in honor of his golden retriever. When asked how long he plans on working the food truck, he says his wife had a job she loves, and when she retires, he will, too. Congratulations on being your own boss, Paul, and THANK YOU for your service.
