So, I’ve decided to be more consistent about sharing our menu, my love for cooking and some of the fun things going on each week in and around our house. Often times if I post a picture of what we’re having for dinner, I include the recipe, but hopefully this makes it easier to see everything in the same place all at once.
So here we go.
SUNDAY: I’M NOT COOKING!!
Last week, I did A TON OF COOKING!! Not complaining, I love doing it and it was for a very good cause, The Pando Initiative. Cooking For A Cause was a blast and they raised a bunch of money BUT after over 2 gallons of molé, 50 pounds of pork belly and 312 Brown Butter Ghost Pepper Chocolate Chip Cookies, I’m taking the night off. However, here is the recipe for the molé.
The cookies were easy. Use any chocolate chip cookie recipe you have, brown the butter, and use 1/8 of a tsp. of ghost pepper chili powder. I got the powder from The Spice Merchant. 1/8 doesn’t sound like a lot, but trust me it’s perfect.
As far as the pork belly, I roasted it in the over at 275 degrees for 2 hours, turned it up to 400 degrees for 10 minutes, let it cool and then pulsed it in batches in the food processor 4 or 5 times to shred it. Then, saute it in a cast iron skill to make it crispy. Use whatever spices you want. I roast my pork belly with brown sugar, maple syrup, salt, pepper and cumin.
The tortillas for the street tacos we served at “Cooking For A Cause” I picked up at La Tradicion Tortilleria on N. Broadway. I HIGHLY recommend.
Again, after all that… #NotCooking. Instead, we were thinking Teriyaki House on S. Rock Road. Amy discovered it after starting her new job and introduced me to it a few weeks ago….really yummy.

Amy found this Artichoke Roasted Red Pepper salad recipe on Pinterest. We’ve never had it, I’ve never made it, but it sound so delicious, fresh and flavorful. So, we’re gonna give it a try.
THURSDAY
We’re going out on a “School Night”. Cirque Du Soleiil Corteo is coming to town at Intrust Bank Arena and no matter what version of Cirque it is, it’s always stunning. Amy and I are excited about opening night.
FRIDAY
The Marvels – the nerd in me is pretty excited about this movie. If you are a Marvel movie fan and haven’t watched the Ms. Marvel series on Disney+, it was a lot of fun. I expect this movie to be the thing that really launches us in the direction of the next phase in the MCU. Before the movie, we’ll hit our favorite sushi place in town. We’ve tried a lot of them and this one is our go to. Sapporo
SATURDAY
Amy and I are heading to Fur Ball to help out Beauties and Beasts. If you missed it this year, put it on your calendar for next year. Always a good time and a great way to score some sweet auction stuff all while helping the puppies and the kitties
