It’s Tourney Time. AAC Tourney today, Selection Sunday this weekend, the play in games next week…..it’s time to think about what your snacking situation looks like. I jumped on Zoom with Snacking Enthusiast Donn Paul who shared his thoughts and a couple of recipes.
Jalapeño Cheese Dip
Ingredients:
● 4 large jalapeño peppers, diced and deseeded
● 4 oz cotija cheese
● 8 oz cream cheese, at room temperature
● 4 oz shredded cheddar
● Fresh cilantro to taste, chopped
● 2 cups shredded Chicken, cooked
● 4 Tbsp. Onion, diced
Directions:
Mash the cotija, cream cheese, shredded cheese, onion, cilantro chicken, and diced jalapenos together in a medium baking dish.
Bake at 4250F for 15 minutes, or until the cheese is brown at the edges and bubbly.
Serve warm with your favorite tortilla chips.
Zucchini Crumble Crisps
Ingredients
● 2 medium zucchini
● 2 eggs
● ¾ cup all-purpose flour
● 2 cups ParmCrisps, crumbled
● ½ cup parmesan cheese
● Vegetable oil for frying
Directions
Mix flour and egg in one shallow bowl
In another shallow bowl mix ParmCrisps crumbs and parmesan cheese
Dip sliced zucchini into egg mixture then into Cheese Crumbles mixture
Cook on the stove in oil over medium heat (2-3 mins per side)
